Set cookies aside to cool.  Give out samples to your dogs.  Place leftovers in an airtight container.  These were taste tested and given lip smacking approval by Leo, Issy, Teddy & Harvey on July 31st 2012.

Options - you may substitute half of the oat flour with quaker oats.  You may also make the cookies smaller, but you may need to cook them a bit less, so keep an eye on them towards the end of cooking time.  You may omit the mint.  These would make a wonderful gift for your furry friends.  Place in a decorated Ziploc or Hefty container or other airtight container for wonderful gift giving!  They make very festive containers during the holidays.
