Maggie's Pumpkin Pie Cookies

Ingredients:



2 eggs
1/2 cup canned pumpkin
1/2 teaspoon all spice or 1/4 teaspoon cinnamon
1 teaspoon parsley
2 tablespoons molasses
2 1/2 cups oat flour

Yield - Approximately 17 large dog cookies

Directions:


Preheat oven to 350° F.

In large bowl whisk eggs.  Then add pumpkin, all spice, parsley, molasses and mix well.  Add flour 1/2 cup at a time, mixing well.  Mix until it looks like this:


Optional - place the cookie dough in the refrigerator for 15-30 minutes to make it easier to roll out the cookie dough.  Place some parchment paper on the counter and place the dough on top.  Roll out dough with a rolling pin until about 1/4" inch thick.  Use a cookie cutter to cut out your cookies.  It should look like this:


Pick up remaining dough and knead into a ball and roll out again.  Repeating this process until there is no dough left.  Place cookies on a cookie sheet.  Optional - use a fork to make holes on the top of the cookies, if you used a dog bone shaped cookie cutter.  Your cookies should look like this:


Place cookies in the oven for 20 minutes.  Turn over cookies and place back in the oven for an additional 20 minutes.  Take cookies out of the oven and cool.  They should look like this:


Once the cookies are cool, give out samples to your dogs.  Place remaining cookies in an airtight container for later.

Use organic ingredients whenever possible for the healthiest dog cookies.  Oat flour is more expensive, but is better than regular flour because many dogs are sensitive to regular flour and may have stomach upset as a result.  You can find it at Whole Foods, Vitacost and Amazon.com.
