Crispy Flounder Po'Boys with Buttermilk Rémoulade
Anytime one of the meal kit services offers Po'Boys I order it since we always find it to be a scrumptious treat. We gave this one four out of five stars. Flounder is one of my favorites and this one was yummy especially with the crispy cornmeal. They didn't give us enough buttermilk so Hubby had to use some half and half that we had on hand. There weren't enough dill pickles and sour cream either, just enough for one person. The French rolls were pretty good. This recipe has 650 calories and it's a wonderful cheat meal. It takes about 40 minutes to prepare.
Thai Chicken Salad with Peanut-Ginger Dressing & Crispy Onion
I gave this recipe five out of five stars and Hubby gave it four. The chicken breasts were moist and tender though Hubby improved the recipe by adding two teaspoons of Chinese five spice. I love red onion, but this recipe called for too much. I would have liked more ginger-garlic paste though it's a pain to make. We would have also liked more cabbage and carrots. The crispy fried onion was a delight and it's a simple and easy way to add more flavor and texture to your dish. The peanut-ginger dressing was delightful. I love that they provided my favorite peanut butter brand, Peanut Butter & Co. It was a bit of a light meal best suited for a summer lunch. This one has 610 calories and it takes about 30 minutes to prepare.
Herbed Salmon Caesar with Kale, Brussels Sprouts & Parmesan Frico
Hubby gave this recipe four stars and I gave it three. I'm disappointed that they aren't offering wild-caught salmon anymore. While their price point is higher than the competition, they used to offer better quality ingredients which made up for it. The tomatoes didn't taste very good and there weren't enough Brussels sprouts. While I love kale, there was just too much and it involved so much chewing! This one has 770 calories and it takes about 35 minutes to prepare.
It was a pretty good week of recipes but some of the ingredients weren't in top shape. We are expecting another order on the 12th of April. Until then check out our other recipe results from Hello Fresh, Blue Apron Weight Watchers, and Home Chef. Don't forget to enter my meal kit giveaway.
