This is a review of our 26th delivery from a weekly meal kit subscription box called Hello Fresh. This week we gave two recipes four out of five stars and one recipe three stars. Calories range from 550 to 810 and preparation time stated on the recipe cards range from 40 to 45 minutes. Actual preparation time was 40 to 60 minutes.

This is the 2nd time I have ordered this meal kit, it's scrumptious. We gave it four out of five stars. We would have liked more spice and prefer green pepper over red. Plus, we would have liked more sour cream and pepper jack cheese, but that would raise the calorie count and it's already coming in at 810 calories. It took 40 minutes to prepare while the recipe card states 50 minutes preparation time. It was a filling and healthy portion. This recipe is being offered again September 29th to October 5th.

Amazing Apricot Chicken with Fingerling Potatoes and Green Beans

We gave this recipe three out of five stars. While the Apricot Balsamic Sauce and green beans were very tasty, the potatoes were bland and they needed some spice or something to liven them up. I would have preferred a side salad over the potatoes. The sauce is made with French apricot jam, shallot, thyme, olive oil, vinegar, water, stock concentrate, and butter. The recipe card states 45 minutes preparation time while it took Hubby 60 minutes to prepare. This one comes in at only 550 calories and it was a healthy portion.

Thyme and Honey Pork Chops over Couscous with a Peachy Salad

This is the 2nd time we have ordered this meal kit, it's very tasty. We gave it four out of five stars. We would have liked more arugula and the peach wasn't ripe. We bought a ripe one at the store and I ate their peach as a snack later. We used a white peach and it was really delicious on top of the arugula with the scrumptious dressing. The dressing is made with 1 tsp honey, 1 tbsp vinegar, olive oil, salt, and pepper. So simple yet delicious! The sauce on the pork chops was yummy. It's made with shallot, thyme, stock concentrate, honey, water, salt, and pepper. It took 50 minutes to prepare while the recipe card states 40 minutes. It was a healthy portion with only 570 calories and it was filling.
