This is a review of our 24th delivery from a weekly food subscription box called Sun Basket. This week we gave one recipe five out of five stars and we gave two recipes four out of five stars. Calories ranged from 450 to 600. Preparation time indicated on the recipe cards ranged from twenty to thirty-five minutes. Actual preparation time ranged from forty-six to fifty-eight minutes.

Pork Chops with Mustard Apricot Sauce & Apple Celery Salad

We gave this recipe four out of five stars. The sauce for the pork chops was absolutely scrumptious and there was plenty of it. The mixture of dried apricots, vegetable broth, mustard and maple syrup is a wonderful combination. The pork was tender and well cooked without any dryness. The Apple Celery Salad was very tasty, but it need some spice, perhaps some sumac would be a good addition. The apple and celery were very fresh and crisp. This was a healthy portion that has only 550 calories yet it tastes like it has much more. The recipe states a preparation time of only twenty minutes, but it took Hubby forty-six minutes. The pork and sauce received five stars and the salad three stars for a result of four out of five stars rating.

We gave this recipe five out of five stars. The salmon with the cilantro lime sauce was incredibly delicious. They have been really impressing us with their sauces lately! Cilantro, garlic, lime zest, lime juice and Thai chili make for a fabulous sauce. The Pear Cashew Salad was equally delicious and the dressing was awesome. The combination of celery, scallions, pear, cashews, coconut and cilantro is wonderful. The Asian pear was so tasty and crisp. The simple dressing made with just coconut vinegar, olive oil, salt and pepper was finger licking good. I had the option of ordering it with halibut, but we prefer salmon. It has only 450 calories and it was a healthy portion. Preparation time indicated on the recipe card is twenty minutes yet it took Hubby fifty-one minutes to prepare. 

Sole with Oranges, Fennel & Purple Sweet Potato

Whenever I see a recipe that includes a purple sweet potato I order it since I absolutely love them. We gave this recipe four out of five stars. The breading made with healthy almond meal was light and tasty. The lemon caper sauce for the sole was super delicious. It's made with lemon zest, parsley, capers, butter,  olive oil, salt and pepper. The mixture of orange, olives, purple sweet potato, fennel, olive oil, salt and pepper filled my mouth with a mixture of tart, sweet  and licorice flavor. The lemon was dried out, so we substituted the lemon from the pork chop recipe. Also, the sweet potato was a bit on the small side hence the drop to four stars from five. This one has 600 calories and it was a healthy portion. It took fifty-eight minutes to prepare and the recipe card states up to thirty-five minutes. We could have substituted halibut, but we prefer sole.

This week's recipes were a delight. I really enjoy the unique creations they come up with and the healthy ingredients. I'm amazed at how low the calorie counts are yet there is so much flavor and the portions are filling.
