Creamy Italian Sausage Soup with Butternut Squash, Lacinato Kale & Coconut Milk

This week we gave one recipe five out of five stars, one recipe four stars and one three stars. Calories range from 420-830 and preparation times range from 25-30 minutes.

Anytime there is an offering of soup I'm very tempted by it. I love homemade soup, it tastes so much better than canned. We gave this recipe five out of five stars, it was scrumptious and crave-worthy. The precut yellow onion, coconut milk, and spices are missing from the ingredients photo above because Hubby didn't know I took them out of the bag. I love soup with Italian Sausage! Coconut milk is a great substitute for heavy cream. It's easier on the stomach and it's lower in calories. This meal has 830 calories and takes about 30 minutes to prepare. It was a large portion but it was so tasty I would have loved another serving! The bowl shown above is an extra-large salad bowl, it's huge. This one is a paleo recipe and it's gluten-free. Who else loves butternut squash, kale, and Italian sausage? Yum!


Honey Mustard Salmon with Roasted Carrots & Sautéed Broccoli 


 Ingredients

We gave this recipe four out of five stars, it was delicious. The premade sauce on the salmon was tasty. The roasted rainbow carrots were tender and yummy. Rainbow carrots are hard to find in our area, so I'm always happy to see them in my box. This recipe has only 480 calories and it takes about 30 minutes to prepare. It's a paleo and gluten-free recipe. It was a generous and filling portion. Broccoli is one of my least favorite vegetables since my stomach isn't a fan, so that's what knocked it down from 5 to 4 stars. 


Chicken with Herb Tahini Sauce with Cauliflower Tabbouleh with Cabbage & Roasted Red Peppers

Hubby forgot to take a photo of the ingredients for the recipe shown above. They sent us steak strips instead of chicken, so we defrosted some chicken we had in the freezer and Hubby had the steak for breakfast. I notified Green Chef of the mistake via email and they gave me a refund of $26.50 which is generous. This recipe has only 420 calories and it takes around 25 minutes to prepare. It's a paleo and gluten-free meal. We gave it three out of five stars. We weren't crazy about the sauce on the chicken but the dressing on the cauliflower mix was tasty. Lately, we haven't been a fan of recipes using ginger. It was a filling portion.

Some of the things that we enjoy the most from Green Chef are their organic ingredients and they tend to have more ingredients per recipe than the competition.
