This is a review of our 25th delivery from a food subscription box called Sun Basket. This week we gave two recipes four out of five stars and one recipe three stars. Calories ranged from 400 to 790 and preparation time indicated on the recipe cards ranged from twenty to forty-five minutes. Actual preparation time ranged from thirty-nine to fifty minutes.

Almond Crusted Sole with Piccata Sauce & Baby Broccoli

We gave this recipe four out of five stars. It would have received five stars if the stems of the baby broccoli weren't bad. The sole itself received five out of five stars, it was scrumptious. Almond meal makes a wonderful crust for sole and the sauce made with red pepper vinaigrette, capers, lemon juice, butter, salt and pepper was delicious. The addition of garlic, lemon zest and Chile flakes to the broccoli was tasty. The calorie count on this one is only 400! Wow, it certainly didn't taste like it was low in calories though it was a bit on the lighter side in portion size. The addition of another side or a salad would have made it a bit more filling. This recipe said it would take up to thirty minutes. Actual preparation time was fifty minutes. It's gluten free, paleo, low calorie & soy free.

Sichuan Dan Dan Noodles with Pork & Braised Greens

We gave this recipe four out of five stars. It's a healthy version of Asian take out. It comes in at 790 calories, but it was a very large portion. I couldn't eat it all and there were lots of noddles left over. If we had used all the noodles it would have easily made four portions. The fresh ramen noodles had the perfect texture and were delicious mixed with the pork, braising greens, cashews, scallions, red Chile flakes, Sichuan peppercorns and the dan dan noodle blend. The sauce is made with cashew butter, honey, tamari, sesame oil, rice vinegar, garlic and ginger. It tasted a bit too salty for my taste, so I used it sparingly since I'm on a low salt diet. I believe they sent us some kale by mistake, it wasn't needed. The recipe states it will take up to forty-five minutes, actual preparation time was thirty-nine minutes.

Hoisin Glazed Chicken with Glass Noodle & Cucumber Salad

We gave this recipe three out of five stars. Though the chicken deserves five stars, it was the salad that we didn't care for and there was enough of it for four portions. The above photo only shows what would fit on the plate which is less than half a portion. The glass noodle salad is made with cucumber, mint, cilantro, glass noodles, carrots, dressing, salt and pepper. We would have liked more chicken and less salad. I also prefer cold salad in the spring and summer. The hoisin made with almond butter, coconut aminos, pumpkin puree, prunes, molasses, coconut vinegar, sesame oil, salt and garlic was very tasty. This was already prepared for us, which saved us some time. This one has 630 calories and preparation time was forty-five minutes. The recipe states up to forty minutes preparation time. It's gluten free, paleo & soy free.
