This is a review of our 22nd delivery from a food subscription box called Blue Apron. This week all three recipes received three out of five stars. The calories ranged from 610 to 820. Preparation time stated on the recipe cards ranged from twenty-five to forty-five minutes. Actual preparation time ranged from thirty-seven minutes to over an hour.

Salmon & Udon Noodle Stir-Fry with Sweet Peppers, Bok Choy & Furikake

We gave this recipe three out of five stars. We normally love bok choy, perhaps it wasn't fresh enough or the cooking process reduced it's flavor. While the furikake spice was tasty, it just wasn't spicy enough for us. The sweet peppers were also not fresh and some parts had to be cut off since they went bad. The fresh udon noodles were the best part of the meal. Looking at the ingredient list it should have been a winner for us, just goes to show you how important fresh ingredients are. It was a large portion and it comes in at 690 calories. It took thirty-seven minutes to prepare. The recipe card states up to thirty-five minutes preparation time, so this one was accurate estimate. 

Fontina Cheeseburgers with Cilantro & Tomato Salad

Who doesn't love a burger yet this one only received three out of five stars. The burger was the best part of the meal, but it was a bit on the small side. The fontina cheese was delicious along with the mayo and the soft, fresh potato bun. I skipped the pickled shallots since I can't stomach pickled food. The side salad was a miss. I wish they had sent us charm tomatoes instead of cherry tomatoes which tend to be tart. The recipe card indicated we could receive either type. The cilantro was in bad shape, so without it the recipe lacked some flavor. This recipe has 610 calories. It took over an hour to prepare while the recipe card states only up to thirty-five minutes preparation time.

Seared Chicken & Creamy Eggplant

This recipe is from the tv show Master Chef on Fox. We really haven't been impressed by any of the Master Chef recipes which is so surprising. I gave this recipe three out of five stars and Hubby gave it only two stars. We enjoyed the side of basmati rice and the addition of golden raisins was surprisingly delicious. The side of eggplant was sour. Hubby thinks the eggplant we received was too small for the amount of greek yogurt we received and that perhaps that caused it to be too sour. Also, part of the eggplant has to be cut off since it went bad. The green beans also had some bad parts. The chicken had very little flavor, it was in desperate need of some spice. This one has 820 calories which seems really high. It was a healthy portion. It took fifty-five minutes to prepare and the recipe card states up to forty-five minutes.

This wasn't our favorite week of recipes and several ingredients weren't fresh, so all in all it was a disappointing week. Hopefully, the next week we order will be better. What's your favorite food subscription box? Stay tuned, I'll be having another Blue Apron meal kit giveaway soon.
