This is a review of a weekly food subscription box called Sun Basket. This week all three recipes are gluten free, two are paleo and one is vegetarian. We gave one recipe four out of five stars, one recipe three stars and one recipe two stars. Our favorite recipe was the Mexican Meatball Soup. Preparation time ranged from thirty-eight to fifty minutes.

Mexican Meatball Soup with Butternut Squash & Cilantro

We gave this recipe four out of five stars. The butternut squash and meatballs were really yummy, but to make five stars it would have needed more spice.  The meatballs made with ground pork and beef were very tender. The tomato paste and and the diced tomatoes could have been skipped. We thought not cooking the Napa cabbage was strange, but the bit of crunch it provided was lovely. This recipe is both paleo and gluten free yet so tasty. It had only 660 calories and it took fifty minutes to prepare. The recipe indicated thirty to forty minutes preparation time. It was a generous portion. This is a customer favorite recipe, but it's the first time we have tried it.

I absolutely love sole, so whenever they have a recipe using sole I order it. We gave this one three out of five stars. We aren't crazy about their cauliflower rice. We prefer cauliflower mashed or in large pieces rather than the rice size that they prepare in advance for us. We weren't crazy about the flavor of the blackening spice blend. The grapefruit was a bit tart, but the mandarins were very tasty. This is another paleo and gluten free recipe and it took thirty-eight minutes to prepare. The recipe indicated it takes thirty to forty minutes. It only has 540 calories and it was a healthy portion.

We gave this recipe only two stars. We both love squash, but it tasted out of place. We didn't pickle the onion nor the radish since I can't stomach anything pickled. Hubby makes the best tostadas I've ever tasted, his own creation, so it's hard to compete with his recipe. We were eating them frequently during his time off work, so it was bad timing for this recipe. We also thought we should have been provided with four eggs for two people rather than two, so that it would be more filling. This is a vegetarian and gluten free recipe that took fifty minutes to prepare. The recipe indicated thirty to forty minutes preparation time. It has 620 calories.

While this wasn't our favorite week of recipes from Sun Basket, we still look forward to their box each week since the majority of the recipes are four and five stars. Since they are my favorite meal kit, I highly recommend you give them a try today!
