This is a review of our 2nd delivery from a weekly food subscription box called Terra's Kitchen. The price for this box including shipping was $73.94. This week we gave two recipes four out of five stars and one three out of five stars. Calories for these recipes ranged from only 398 to 526. Preparation time on all three were thirty minutes. Tulum Tacos, Shredded Tender Chicken, Mexican Street Corn Filling & Charred Tortillas
I made this recipe when Hubby was out of town, so the first serving was for dinner and the second serving I ate for lunch the next day. This recipe states it takes thirty minutes to prepare, but it took me twice as long. Mind you, I am an inexperienced chef since Hubby cooks most of our meals. Also, I'm picky about cleaning produce & sanitation and I take my time. I'm the baker in the household, that's my expertise. I gave this one four out of five stars, it was really delicious. For five stars it would need more cheese, sour cream, cilantro and another vegetable. We were suppose to be sent corn tortillas, but mine certainly looked like flour tortillas. I had a hard time broiling them to get them to blacken a bit, so I threw out the first three. Poaching the chicken made it very tender and it was really easy to do, so I liked that technique. In addition, broiling the corn made it very tasty, so I plan to do that again in the future. I didn't shred the chicken because I don't care for it that way, I just cut it into bite sized pieces. It was an easy recipe and a good sized portion. It came in at only 422 calories, so it wasn't filling for long. I wanted a snack a couple hours later, but I resisted and had seltzer water instead.
Grilled Lamb with Pan Roasted Asparagus, Olives & Tomatoes
We both love lamb, so we were really looking forward to this recipe. Hubby gave it four out of five stars and I gave it two stars. I didn't care for the side dish and would have liked a freshly made mint sauce for the lamb. We both used store bought mint sauce since that's what we had on hand. The lamb was tender and not fatty, it was very tasty. The asparagus had such a strong flavor I didn't care for it. Normally I really enjoy asparagus, but this was the thickest I've had before, see photo above. On the other hand, Hubby thought it was delicious. I didn't like the tomatoes and parmesan on top either. The basil went bad, so we weren't able to use it, we used dried basil that we had on hand instead. This recipe stated it took thirty minutes to prepare and Hubby managed to do it in thirty-one minutes. This recipe had only 398 calories which is quite shockingly low. It was a nice dinner sized portion.
TERRAchilada, Spiced Ground Beef, Spinach Salsa Verde & Rolled Tortillas
Hubby gave this recipe three out of five stars and I gave it two. While it's great that it came in at only 526 calories, it was seriously lacking flavor and in need of cheese, sour cream and more cilantro. Also, neither of us cared for the spinach salsa verde. Again, I think we were sent flour instead of corn tortillas. The recipe said this one would take thirty minutes to prepare and that's exactly how long it took.
These recipes were really low in calories and two of three proved that recipes don't need lots of calories to be tasty. I appreciate that Terra's Kitchen comes in closest to the preparation time stated. Often, the competition is way off on preparation time. It's also nice that they do some of the prep work.
