 Korean Style Beef Bowls with Yu Choy & Gochujang Mayo



This week we gave two recipes five out of five stars and one recipe four stars. Calories ranged from 500 to 940. Preparation time ranged from 25 to 40 minutes.

Hubby rated the above recipe five out of five stars and I rated it three stars. It has 940 calories. All of the ingredients were ok except for the radish which was kept too cold in the box and wasn't edible. I don't like radish, so it wasn't a big deal. I can't really pinpoint what I didn't like about the recipe, it just wasn't my cup of tea. We skipped the sugar, Hubby used Stevia instead.


Chicken Milanese with Pizzeria Salad


Hubby gave the above recipe five out of five stars and I have it four stars. I would have like a dipping sauce for the fried chicken, but otherwise, it was scrumptious. The batter was light and crunchy and the chicken was tender. The salad was similar to the flavor of a Ceaser salad. The Castevetrano olives are a good substitute for anchovies. It was a simple yet delightful meal. This one is Christian Petroni's recipe who's a television star, chef and owner of Fortina Restaurant. I'm not familiar with him. This recipe has 720 calories and it takes thirty-five minutes to prepare.



Crispy Potato & Kale Hash with Baked Eggs & Hot Sauce




We both gave this recipe four out of five stars, it's wonderful comfort food yet very nutritious. If you aren't a fan of kale, I bet you would love it in this recipe.
It has only 500 calories yet it tastes like twice that and it's labeled as a carb-conscious dish. It takes 35 minutes to prepare. The dish can be baked in the pan, so it involves less clean up. 

It was an enjoyable week of recipes. Have you tried Blue Apron, what are your thoughts? They recently sent an email saying that they are going to offer some low carb recipes and have more choices each week. In the past, they had a habit of offering rice, grains and other high carb ingredients which made it difficult for me to order for the two of us since Hubby is on a low carb diet. So far the recipes look like they don't have a lot of ingredients, but we will give them a try and see if they taste better than they look.
