This is a review of our 68th delivery from a weekly food subscription box called Home Chef. This week we gave one recipe five out of five stars, one recipe four stars and one recipe three stars. Calories range from 529 to 949 and carbs range from 28 to 73 grams. Preparation time stated on the recipe cards ranges from 25 to 45 minutes. Actual preparation time was 44 to 58 minutes. Mind you I'm an inexperienced cook and I made two of the three meals and experienced chef Hubby made one.
Cranberry Rosemary Pork Chop with Brussels Sprouts and Butternut Squash
Hubby gave this recipe five out of five stars and I gave it four stars. I would have liked a bit more of the delicious sauce and more yummy squash. The sauce is made with water, cranberry sauce, demi-glace, and a rosemary sprig. Their bone-in pork chops are always delicious along with their sauces. This recipe has only 622 calories and 29 grams of carbs. It was a generous and filling portion. It took 44 minutes to prepare while the recipe card states 30 to 40 minutes.
BBQ Ranch Steak Quesadillas with Corn Salsa
Hubby was out of town so I made this one and I gave it three out of five stars. I accidentally skipped the BBQ sauce which is ok since I don't like most BBQ sauce anyway. While it was a tasty meal, I would have preferred pico de gallo instead of the corn salsa. I found it tricky trying to get the quesadilla cooked in the pan properly. The first one was undercooked, the second one was perfect and the third one was too brown. Mind you I'm an experienced cook. There was only enough ranch dressing for one person and I would have liked more cilantro. This recipe has 949 calories and 73 carbs. It took me 58 minutes to prepare while the recipe card states 25-35 minutes.
Chile Rellenos Chicken with Chipotle Butternut Carrot Mash
I gave this recipe four out of five stars. The chihuahua cheese, olive oil, garlic, and poblano pepper were so very tasty on top of the chicken! They wanted me to finish the dish off in the oven but I couldn't be bothered, I just placed it in the microwave for about a minute and the cheese was perfectly melted. I would have preferred to skip the carrots, I think the butternut squash tastes better by itself and I found the chipotle powder too smoky and spicy. Though I noticed afterward the recipe card stated to add as much spice as you would like. I should have used half or less. This recipe has only 569 calories and 28 carbs and it took 50 minutes to prepare. The recipe card states preparation time at 35 to 45 minutes.
It was another enjoyable week of Home Chef recipes. I wish I could have shared them all with Hubby, but he had to go out of town on business. I made two of the recipes for dinner and then had the leftovers for lunch the next day or two.
