This is a review of our 27th delivery from a weekly food subscription box called Blue Apron. Normally, a box of six servings costs $59.94, but this week I had a $15 coupon to unskip, so I did. We gave all three recipes three out of five stars. Calories ranged from 610 to 700 and preparation time indicated on the recipe cards ranges from 25 to 50 minutes. Actual preparation time ranged from 53 to 65 minutes.

Spiced Chicken Breasts & Mashed Potatoes with Blue Cheese Kale Salad

We gave this recipe three out of five stars. They had given us crema bel paese cheese before and it was delicious. Since there were too many potatoes this time, it wasn't as flavorful. The weekend hero spice blend made with onion powder garlic powder, smoked paprika and dried parsley was ok, but not exciting. The salad made with kale, crumbled blue cheese, sour cream, milk, salt and pepper was very tasty. This one has 660 calories and it was a healthy portion. While the recipe card stated up to 35 minutes preparation time, actual preparation time was 54 minutes.

Spinach, Tomato & Goat Cheese Quiches with Roasted Zucchini

I absolutely love quiche and I rarely eat it due to high calories, so when I saw this one came in at only 610 calories I immediately ordered it. We gave this recipe three out of five stars. It had too much filling and not enough egg. Only one egg per pie wasn't enough. There was too much tomato and the spinach should have been cut into smaller pieces. The feta cheese dried out when it baked. It would have been better to skip the feta cheese and add more goat cheese. Also, there wasn't enough of the red pepper flakes to add enough spice. The pie crust was exceptional and it was wonderfully buttery. I usually don't eat much pie crust, but this one was worth the calories. Hubby skipped the crust to lower the carb count. It was suppose to come with broccoli, but they substituted zucchini. It was a generous portion. This recipe states up to 50 minutes preparation time while it took Hubby 53 minutes to prepare.

Chinese Chicken Salad with Crispy Wonton Noodles

For several weeks, celebrity Chrissy Teigen has been offering her recipes at Blue Apron. This is one of her Asian recipes. We found it disappointing and gave it only three out of five stars. It had too much filler, too much cabbage & carrots. While we appreciated that the crispy noodles were made with fresh wonton noodles, they were too narrow and not very tasty. It needed more spice, just one tablespoon of sambal oelek wasn't enough. It could have been made so much tastier with just a few changes. It also has a lot of calories, coming in at 700. It didn't taste like a cheat meal though, unfortunately and it was way too large a portion. We had a ton of cabbage, noodles and shredded carrot leftover. There was just enough chicken for a healthy portion. The recipe card states up to 40 minutes preparation time, while actual prep time was 65 minutes.

It was a disappointing week of recipes this week. We are expecting another box this Friday and based on previous weeks it should be better than this last one.
