Chicken Meatballs & Fregola Sarda with Kale & Sicilian Tomato Sauce

Ingredients

This is a review of the 18th delivery we received from a food subscription box called Blue Apron. This week I was ill and Hubby was out of town several days, so we didn't make the third dinner which was Top Chef Spice Rubbed Pork with Sweet Red Onion & Black Beans. It was one of the recipes created by the winner of the latest season of the Top Chef television show. I read some reviews that it was disappointing, so we weren't as anxious to make as we were prior to reading the bad reviews. It just doesn't seem like a very creative dish considering it's from the winner of the show. The calories ranged from 710 to 800. The preparation time indicated on the recipe cards ranged from twenty-five to forty-five minutes. Actual preparation time was one hour for both recipes.

Katsu Style Catfish with Black Garlic Mayonnaise & Jasmine Rice

I love any Katsu dish in restaurants, so I was really excited to have Hubby make it at home. We also had black garlic before and absolutely loved it's flavor. Since I was sick my taste buds were off and the black garlic mayo was a turn off, so I skipped it. The Katsu Catfish was so tasty. The fish was flaky and the batter was delightfully crisp. The cabbage with dressing was scrumptious. We gave this recipe four out of five stars. It has 800 calories which seems like a lot considering the ingredients. It was a healthy portion. It took one hour to prepare while the recipe says it will take up to thirty-five minutes.

Chicken Meatballs & Fregola Sarda with Kale & Sicilian Tomato Sauce

I made this recipe when Hubby was out of town. I'm not a fan of making meatballs since long nails are hard to clean after forming the meatballs not to mention I don't like touching raw meat. As a ex-vegetarian it grosses me out and normally I have Hubby do it. I have to eat meat due to IBS. I was a bit intimidated by this recipe, but I pushed myself to do a step at a time and it turned out good. It was very tasty and filling. We try to eat more chicken than beef, so it's nice to have a chicken meatball recipe for a change. I didn't miss the beef at all. I love kale, so it was a nice addition to the fregola sarda. I love the texture of the fregola sarda. If you haven't tried this type of pasta before, you should give it a try. The addition of capers and golden raisins was lovely. This recipe has 710 calories and it was a very filling portion. It took an hour to prepare while the recipe card stated only thirty-five to forty-five minutes.

It was an enjoyable week of recipes, I just wish their preparation times were more accurate and less time consuming. If you haven't tried Blue Apron yet, you owe it to yourself to give it a try. They often use unique ingredients and most of the time the ingredients arrive in good shape and the recipes are tasty. Don't forget to enter my current giveaway
