This is a review of the 17th delivery we have received from a weekly food subscription box called Sun Basket. This week we gave two recipes four out of five stars and one recipe three stars. All three recipes are gluten free and two are paleo. Preparation time ranged from twenty to thirty-five minutes. Calories ranged from 680 to 710. If you are here for the giveaway only, scroll down.

Southeast Asian Coconut Poached Salmon with Red Chard

Hubby and I both gave this recipe four out of five stars. The sauce made with anchovy, lemongrass paste and coconut milk was awesome! Every time we have had a Sun Basket sauce or broth made with lemongrass it's been scrumptious, so I always order those recipes. We were sent chicken thighs instead of salmon by mistake. This is the first time we have received the wrong ingredient. We always keep wild caught salmon in our freezer, so it wasn't a big deal. In the above photo, it shows the salmon we provided. This recipe has 690 calories and it took about fifty minutes to prepare though the recipe indicates only thirty minutes. It's a paleo, gluten free and lean and clean recipe. It was a healthy portion.

Italian Meatball Soup with Sweet Potatoes & Escarole

Hubby gave this recipe four out of five stars and I gave it three. We froze the turkey since Hubby had to go out of town on business. The ingredients arrived on the 11th, but we didn't make it until the 23rd so we had to replace the dill, scallions and escarole since they weren't fresh anymore. We substituted kale for the escarole since we love kale in soup. The sweet potato in the soup was so delicious. I'm not quite sure I like cinnamon spice in my soup, but Hubby loved it. This recipe took fifty minutes to prepare while the recipe stated only twenty minutes. It's a paleo and gluten free recipe. It has 680 calories per serving, but since there was so much food, we had three servings which lowers the calories down to 453. 

Kyoto Chicken & Soba Noodle Salad

We both gave this recipe three out of five stars. I froze the chicken so that we could make this later since Hubby had to go out of town. It arrived on the 11th and we made it on the 22nd. All of the ingredients were still in good shape. The salad while tasty really needed another ingredient perhaps some orange or cashews and some spice. There was enough salad left over for two more portions so the 710 calories isn't accurate, it's much lower. It took about fifty minutes to prepare while the recipe indicates thirty-five minutes. It's a gluten free recipe, but they substituted wheat noodles instead of the buckwheat noodles they were suppose to send.
