This is a review of our 6th shipment from a meal kit subscription box called Sun Basket. This week we gave one recipe five out of five stars, one recipe three stars and two recipes two stars. Calories ranged from 360 to 680 and preparation time ranged from ten to forty minutes. Servings cost $11.49 each except for breakfast which you receive two recipes for the price of one dinner. Our favorite recipe this week was Trout with Date & Apricot Salad.
Trout in Parchment with Warm Date & Apricot Salad
I gave this recipe five out of five stars and Hubby gave it four. I love trout, so whenever they offer it I order it. This delicious recipe had only 680 calories and it took fifty minutes to prepare while it specified only twenty minutes. It was scrumptious! The warm salad made with apricots, sumac, dates, almonds and parsley was sweet almost like dessert. The trout with the lemon, spinach and shallots was so tasty. It was a healthy and filling portion. It's gluten free and paleo.
Tandoori Style Chicken with Coconut Okra & Cilantro Rice
This Indian dish is part of the Globetrotter promotion and I was really excited about it, but it was disappointing. It was just too tart for our liking and we didn't care for the texture of the okra while we liked it's flavor. The side dish would have tasted better if the coconut had been added after cooking the okra rather than during. The yogurt sauce was too thick and we didn't like the flavor of the spices which were beet powder, garam marsala and garlic powder. It was probably the beet powder that we didn't like. The cilantro was a nice addition to the rice. This one said it would take thirty to forty minutes and it took Hubby fifty-seven. This gluten free recipe had only 630 calories and it was a healthy and filling portion.
Corn Scramble with Cilantro Pesto
I always look forward to their breakfast recipes since breakfast tends to be quite boring and unexciting. We both agreed this one deserves three out of five stars. It was tasty, but the addition of the corn we weren't really crazy about and we both prefer pesto made with basil instead of cilantro. The scallions were cooked. We would have preferred them added after the eggs were cooked since they have so much more flavor that way. I love their eggs since they are of the highest quality of any of the meal kit services I've tried. This dish only had 390 calories and it took twenty minutes to prepare. The recipe stated only ten to fifteen minutes preparation. It's a gluten free vegetarian recipe.
Overnight Strawberry Pudding
I made this breakfast for hubby since he loves chia seeds that have been soaked overnight and plumped up. Unfortunately, he did not care for the texture of the pudding so he didn't like it at all. It took me about ten minutes to prepare just as recipe stated. It had 360 calories and it's gluten free, paleo and vegetarian. He gave it two out of five stars and it was a very generous portion.
